I don’t know about you, but I could eat breakfast for every meal! This week was one of those that seemed to drag on forever, honestly I’m glad it’s over. So, we decided to start the weekend off a bit early by enjoying some brunch at home!
Gathering recipes from all over is one of my favorite pastimes. This recipe my Aunt found while visiting Vermont many years ago. She stayed at a bed and breakfast (formerly The Inn on Covered Bridge Green, now Rockwell’s retreat) that (you guessed it) was the former home of Norman Rockwell! It seems like such a quaint and lovely place, I hope to visit someday! She had french toast there that was so good, she asked for the recipe. We have made it together several times over the years but I hadn’t made it in forever! Looking back over the recipe, I decided to make a few tweaks and changes, and I am so excited for how the final product turned out.
We enjoyed it with hash browns and Turkey bacon. I also served it with berries and powdered sugar on the top, but I think it would have been sweet enough without it.
Remember, in the final step while broiling, do not take your eyes off it! Remove it from the oven the second the topping starts to bubble and let it rest. This way the toast will not deflate, or get soggy and stuck to the bottom of the dish.
